Mix together dry ingredients and set aside. Cream butter and sugar, then mix in wet ingredients.
Stir in the dry ingredients to form a rollable, smooth dough.
Scoop dough into 1" balls, roll to round, then coat in sugar.
Bake until crackled on top and fully set.
Place all filling ingredients in a bowl and mix until well combined.
Pair cookies, frost one half of each pair just shy of the cookie's edge.
Sandwich the unfrosted cookie on top for an adorable gingerbread sandwich!
