*Note: for GF cookies use oat flour
Cream butters, sugars, and vanilla.
Beat in the egg.
Mix in dries just until combined.
Scoop into 2" rounds and tray on a lined baking sheet.
Bake until bottoms are golden brown and tops are dry. Knock firmly on the counter right when cookies come out of the oven.
Cool, pass around some nutty deliciousness, and enjoy!
