Fresh Mint Strawberry Trifle Recipe

This homemade strawberry trifle recipe is filled with extra refreshing fresh mint flavor and light textures throughout it's beautiful layers!

Let's bake!

Make mint simple syrup and infuse for 12-24 hours before baking your cake.

Whip eggs and sugar to "ribbon stage" - very light and fluffy!

Fold in flour in several batches.

Stir in melted butter until combined.

Transfer batter to a 10"  pan and shake to level.

Bake until golden brown, cool fully, slice, soak with the mint syrup, then cut again into 1" cube.

Whip cream, powdered sugar, and vanilla extract until soft peaks.

Slice strawberries into bite-sized pieces - quarters or halves.

Assemble trifle: start with a layer of cake in the bottom of a trifle dish.

Add a full layer of strawberries on top.

Then a full layer of whipped cream.

Repeat each layer once more, then garish with berries and mint leaves.  Serve and enjoy!
